Lemon Herb Salmon Rice Bowl

Very easy salad perfect for all occasions and summer days.

Ingredients

  • 4 salmon fillets
  • 280 g basmati rice
  • 1 lemon, zest and juice
  • 1 courgette, sliced
  • 200 g broccoli florets
  • 1 handful fresh dill or parsley
  • 1 tbsp olive oil
  • salt and black pepper

Preparation

Fresh, simple and perfect for a demo-style dinner.

  1. Rinse the rice, then cook until fluffy using your preferred Thermomix® rice method.
  2. Season the salmon with lemon zest, lemon juice, olive oil, salt and black pepper.
  3. Steam the salmon and vegetables until tender and just cooked through.
  4. Fold chopped herbs through the warm rice and add an extra squeeze of lemon.
  5. Serve the salmon over rice with vegetables on the side and fresh herbs on top.
