Ingredients
- 4 salmon fillets
- 280 g basmati rice
- 1 lemon, zest and juice
- 1 courgette, sliced
- 200 g broccoli florets
- 1 handful fresh dill or parsley
- 1 tbsp olive oil
- salt and black pepper
Preparation
Fresh, simple and perfect for a demo-style dinner.
- Rinse the rice, then cook until fluffy using your preferred Thermomix® rice method.
- Season the salmon with lemon zest, lemon juice, olive oil, salt and black pepper.
- Steam the salmon and vegetables until tender and just cooked through.
- Fold chopped herbs through the warm rice and add an extra squeeze of lemon.
- Serve the salmon over rice with vegetables on the side and fresh herbs on top.
